About the Recipe
This recipe walks you through the steps of making a beautifully smooth, flavourful and versatile Romesco Sauce which is made by charring red peppers.

Ingredients
Red Peppers: Around 300gm-400gm
Tomato: 2 medium
Almonds: 4 tbsp
Garlic: 2-3 cloves
Olive Oil: 2 tbsp
White Wine Vinegar/Normal Vinegar: 2 tbsp
Kashmiri Chilli Powder: 2 tsp
Salt to taste
Preparation
Step 1
Char the red peppers and tomatoes on the flame. Place them in a container and cover them. After 5 mins, remove the skin.
Step 2
Slit them, remove the centre part and cut into equal pieces.
Step 3
Separately toast garlic and almonds in a pan with olive oil. Blend the almonds to form a paste.
Step 4
Take a blender, add the tomatoes, red peppers, almond paste, toasted garlic, white wine vinegar (or normal vinegar), kashmiri chilli powder, salt and olive oil. Blend it. Taste and adjust the seasoning. I have also added some sugar to balance the flavours.
Step 5
Your Romesco Sauce is ready. Store for a week in the refrigerator and enjoy!
