Molecular Gastronomy: Spherification
You can make these beautiful coffee-flavoured Caviar at home with this recipe.
Proves to be a great addition to your desserts and drinks!

Ingredients

  • Water: 250 ml

  • Sugar: 2 tbsp

  • Coffee: 1 tbsp

  • Vanilla Essence: 1 tsp

  • Agar Agar: 3 gm

  • Frozen Oil

Preparation

Step 1

Take a sauce pot, add water, sugar, coffee, vanilla essence and heat this well.


Step 2

Add 3gm Agar Agar and bring it to a boil for 2 mins while whisking.


Step 3

Transfer to a squeezy bottle and drop by drop add it to frozen oil. Pass through a sieve and run it through cold water. Your Caviar is ready!
