About the Recipe
This recipe walks you through the steps of making Green Oil which is an infused oil.
You can use it for food plating, garnishing, presentation or even for cooking.
It adds a great aroma, texture and fat to your dishes.

Ingredients
Coriander Leaves: 50 gm
Dill Leaves: 50 gm
Neutral Oil: 150 gm
Preparation
Step 1
Wash the coriander and dill leaves. Add them to boiling water for 1 minute. Take them out and immediately transfer them to ice cold water. This process is called blanching.
Step 2
After cooling them down, pat dry them properly using a kitchen towel.
Step 3
Once they have dried completely, transfer to a blender with oil, preferably any neutral oil like Sunflower Oil. Blend it.
Step 4
Transfer to a bowl passing it through a seive to filter out the residue. Let it sit for atleast 6 hours or maximum 48 hours. During this step, preferably keep it in the fridge or in a cool environment to avoid darkening of green colour. Your green oil is ready!
