About the Recipe
This recipe is for a Desi Style Paneer Grilled Sandwich featuring Green Chutney, Schezwan Chutney, Cheese, and a vegetable-paneer filling. The sandwich combines spicy, tangy, creamy, and cheesy elements for a flavorful street-style grilled sandwich.
Ingredients
(A) Green Chutney
Coriander Leaves: 2 bunch (60 g)
Mint Leaves: 1 bunch (30 g)
Ginger: 2 inch
Green Chilli: 4 pcs
Roasted Cumin: 1 tsp
Amchur: 1 tsp
Chaat Masala: 1 tsp
Garam Masala: 1 tsp
Lemon Juice: 1 tsp
Gathiya
Salt: As required
(B) Schezwan Chutney
Kashmiri Red Chilli: 35 pcs
Oil: 1 cup
Sichuan Pepper: 1 tsp
White Pepper or Black Pepper: 1 tsp
Star Anise: 5 pcs
Garlic: 1 cup (finely chopped)
Ginger: 1/3 cup (finely chopped)
Coriander Stem: 1/4 cup (finely chopped)
Tomato Puree: 1/2 cup (use more if required)
Vinegar: 2 tbsp (use more if required)
Soy Sauce: 2 tbsp
Sugar: 1/4 cup
MSG: 2 tbsp
Salt: As required
(C) Sandwich Filling
Onion: 1 pc, cubed
Capsicum: 1 pc, cubed
Tomato: 1 pc, sliced
Paneer: As required, cubed
Chaat Masala: As required
(D) Sandwich Assembly
Bread: Classic Jumbo Sandwich Bread
Butter: As required
Green Chutney: As required
Schezwan Chutney: As required
Processed Cheese: As required
Prepared Filling: As required
Preparation
(A) Green Chutney
Step 1
Add coriander leaves, mint leaves, ginger, green chilli, roasted cumin, amchur, chaat masala, garam masala, lemon juice, gathiya and salt into a blender.
Step 2
Blend everything together until smooth.
Step 3
Your green chutney is ready. Store in an air-tight glass container in the refrigerator.
(B) Schezwan Chutney
Step 1
Remove the stems from the kashmiri red chillies and remove some of the seeds.
Step 2
Soak the chillies in hot water for 30 minutes until soft.
Step 3
Blend the soaked chillies into a smooth paste using the soaking water if required.
Step 4
Heat oil in a wok and add star anise.
Step 5
Add garlic, ginger, and coriander stem.
Step 6
Cook for about 5 minutes until the garlic becomes lightly golden brown.
Step 7
Add the kashmiri red chilli paste and salt.
Step 8
Cook for about 15 minutes until the mixture darkens and the oil starts separating.
Step 9
Add tomato puree, soy sauce, vinegar, MSG, sugar, and pepper.
Step 10
Mix well and cook for 5 minutes.
Step 11
Cool completely before storing. Store in an air-tight glass container in the refrigerator.
(C) Sandwich Filling
Step 1
Cube the onion, capsicum, tomato and paneer.
Step 2
Season the vegetables and paneer lightly with chaat masala. (optional)
(D) Sandwich Assembly
Step 1
Take a slice of bread, spread butter and green chutney.
Step 2
Add cubed onion, capsicum, tomato and paneer. Top with grated cheese.
Step 3
Spread butter and schezwan chutney on the second bread slice. Add the cubed vegetables and paneer. Add another layer of grated cheese.
Step 4
Close the sandwich with another bread slice. Grill until golden and crisp. Your Desi style paneer grilled sandwich is ready.
Tips and Tricks:
Soak Kashmiri Red Chillies properly for a smoother Schezwan Chutney.
Allow the Schezwan Chutney to cool completely before storing.
Do not overfill the sandwich, otherwise it may break while grilling.
Grill on medium heat for an evenly crisp exterior and melted cheese interior.
