Folded Pizza Sandwich is a fun twist on the classic pizza. Instead of using a flat pizza base, homemade pizza dough is proofed, folded and baked to create a soft bread pocket. Once baked, it is filled with freshly prepared pizza sauce, crunchy vegetables and cheese before being served warm. It's perfect as a snack, lunch or quick dinner and delivers all the flavours of pizza in a convenient sandwich form.
Ingredients
PIZZA DOUGH
Water: 150g
Yeast: 0.25g
White Flour: 250g
Salt: 7.5g
PIZZA SAUCE
Olive Oil (or Neutral Oil): 4 tbsp
Onion (medium, finely chopped): 1 pc
Garlic Cloves (finely minced): 5 pc
Chilli Flakes: 1 tsp
Tomato Puree: 250g
Dried Oregano: 1 tsp (or to taste)
Salt: To taste
Black Pepper: To taste
FILLING
Pizza Sauce: As required
Mozzarella Cheese: As required
Capsicum (sliced): As required
Onion (sliced): As required
Sweet Corn (optional): As required
Black Olives (optional): As required
Paneer (optional): As required
Butter or Olive Oil (for brushing): As required
Preparation
Step 1
Prepare the pizza dough by mixing water and yeast in a bowl. Gradually add the white flour while continuously mixing.
Step 2
Once all the flour is incorporated, add the salt and knead the dough for 3-5 minutes until smooth.
Step 3
Shape the dough into a ball, cover it and allow it to proof for 1 hour.
Step 4
After the first proof, perform a windowpane test. Re-knead the dough gently for 2-3 minutes.
Step 5
Allow the dough to undergo a second proof for another 1 hour or until doubled in size. If desired, the dough can be cold-fermented overnight for better flavour.
Step 6
Meanwhile, prepare the pizza sauce. Heat olive oil in a pan over medium heat.
Step 7
Add the finely chopped onion and cook until soft and translucent.
Step 8
Add the minced garlic and chilli flakes. Sauté for 1-2 minutes until fragrant.
Step 9
Add the tomato puree and cook over medium heat for about 15 minutes until the sauce thickens and the oil begins to separate.
Step 10
Turn off the heat and season with oregano, salt and black pepper. Allow the sauce to cool completely.
Step 11
Prepare the filling by lightly sauteing the vegetables and/or paneer in a pan with some oil.
Step 12
Once the dough has proofed, divide it into equal portions and roll each into a round or oval shape.
Step 13
Fold the dough to create a sandwich pocket, ensuring the edges are sealed properly.

Transfer the folded dough onto a baking tray lined with parchment paper.
Step 15
Bake in a preheated oven until the bread is golden brown and fully cooked.

Allow the baked folded bread to cool slightly before carefully opening the pocket.

Spread a generous layer of prepared pizza sauce inside the folded bread.

Add mozzarella cheese and veggies as desired.

Serve immediately while warm. If preferred, place the filled sandwich back into the oven for 2-3 minutes to melt the cheese completely.
Tips and Tricks:
Allow the dough to proof properly for a light and airy texture.
Do not overfill the bread pocket, as it may become difficult to handle.
Use freshly grated mozzarella for the best flavour.
Brush the baked bread lightly with butter or olive oil before serving for extra flavour and shine.
