About the Recipe
Every vegetable has a season and it's important that we consume these vegetables in their season.
I made this classic and simple sabzi of Aloo Gajar Matar which turned out super delicious.

Ingredients
Tomato: 3 pc
Green Chilli: 2 pc
Ginger: 1 inch
Garlic: 2-3 cloves
Carrot: 3-4 pc
Potato: 2 pc
Peas: 1½-2 cups
Ghee/Oil: 2 tbsp
Cumin: 1 tsp
Onion Puree of: 1 pc
Salt to taste
Coriander Powder: 1 tbsp
Kashmiri Chilli Powder: 1 tbsp
Haldi/Turmeric Powder: ½ tsp
Kasuri Methi

Preparation
Step 1
Make a puree using tomato, green chilli, ginger and garlic.
Step 2
Boil the peas in hot water with some salt. Once boiled, immediately transfer to cold water. This helps preserve the vibrant green colour.
Step 3
Take a kadai, add ghee/oil, cumin, onion puree, salt and cook till onion changes colour.
Step 4
Add the tomato puree along with salt, coriander powder, kashmiri chilli powder, haldi powder, mix well and let it cook.
Step 5
Add the cut potatoes along with water, cover and cook for 5-8 mins. Once the potatoes are 50% done, add carrot as well, again cover and cook.
Step 6
Once the potatoes and carrots are almost done cooking, add kasuri methi and the boiled peas. Let it cook just for a while (2 mins) till everything comes together. Top with coriander leaves, serve and enjoy!
