About the Recipe
I am a huge fan of Mushrooms and this Mushroom Dum recipe is one of my favourites.
Fun Fact: Do you know it is impossible to overcook mushrooms?
This is because of Chitin which is present in it's cell walls. It is insoluble even in boiling water because of which they never break down. However, you can still burn them, so beware.

Ingredients
Curd: ½ cup
Coriander Powder: 1 tbsp
Kashmiri Chilli Powder: 1 tbsp
Turmeric Powder: 1 tsp
Jeera Powder: 1 tsp
Mustard Oil: 2 tbsp
Mushrooms: 400 gm
Bay Leaf: 1 pc
Clove: 1 pc
Badi Elaichi: 1 pc
Choti Elaichi: 1 pc
Cumin: 2 tsp
Onion Puree of: 3 pc
Salt to taste
Pepper
Ginger: 1 inch
Garlic: 1 tbsp
Tomato Puree of: 2 pc
Kasuri Methi
Coriander Leaves
Preparation
Step 1
Take a bowl, add curd, coriander powder, kashmiri chilli powder, turmeric powder, jeera powder and mix well.
Step 2
Take a kadai, add mustard oil and fry the mushrooms on high heat.
Step 3
In the same oil, add the whole spices along with onion puree and salt. Cook till colour changes.
Step 4
Add chopped ginger, garlic and cook them as well.
Step 5
Add tomato puree, salt and pepper. Cook till 60% done. Then add the curd concoction, mix well, cover with a lid and cook till oil rises.
Step 6
Add some water, mix well and cook on dum.
Step 7
Once cooked, add toasted kasuri methi and the fried mushrooms. Mix well, cover and cook for a few mins.
Step 8
Top with coriander leaves and your mushroom dum is ready. Serve and enjoy!
