About the Recipe
This Pindi Chole recipe is made without using onion and garlic and no, that doesn't compromise the taste at all. I promise you'll love each and every bite of this dish. Serve with homemade Bhature and there you have Chole Bhature at home.

Ingredients
Kabuli Chana: 2 cups
Boiled Tea Water: 2 tsp
Amla Water: 1 tsp
Green Cardamom: 2 pc
Black Cardamom: 2 pc
Cloves: 2-3 pc
Cinnamon: 1/2 inch
Bay Leaf: 2 pc
Baking Soda: 1/2 tsp
Salt to taste
Chole Masala: 4-5 tbsp
Kashmiri Chilli Powder: 2 tsp
Red Chilli Powder: 1 tsp
Turmeric Powder: 1/2 tsp
Coriander Powder: 1 tbsp
Anardana: 1/2 tsp
Ghee: 2 tsp
Hing: 1/2 tsp
Ginger Juliennes: 2 inch
Green Chilli (Slit): 3-4 pcs
Preparation
Step 1
Wash and soak kabuli chana for 6-8 hours.
Step 2
Take a cooker, add the soaked chana, boiled tea water, amla water, whole spices (mentioned in the ingredients list), baking soda, salt and water. It should barely submerge in water. Cook for 3-4 whistles or till properly boiled. Reserve the leftover water.
Step 3
Take a kadai (preferably iron), add the boiled chole (remove the whole spices), chole masala, kashmiri red chilli powder, red chilli powder, coriander powder, anardana and haldi. Coat well and set aside for 15 mins.
Step 4
Put it on heat with the reserved water and let it cook.
Step 5
Prepare a tadka using ghee, hing, ginger and green chilli. Add it to the chole and mix well. Let everything come together. Add more water if required.
Step 6
Garnish, serve and enjoy!
