Cream of Spinach - Soup

Ingredients

  • Olive Oil: 2 tbsp

  • Onion: 2 medium

  • Garlic: 3-4 cloves

  • Butter: 2 tbsp

  • Maida/All purpose Flour: 2-3 tbsp

  • Water: 200 ml

  • Milk: 350 ml

  • Spinach: 2 bundles

  • Ice Cold Water

  • Salt to taste

  • Pepper

  • Nutmeg: A pinch

Preparation

Step 1

Take a saucepot, add oil, chopped onions and cook till translucent. Add chopped garlic and salt. Saute.


Step 2

Make space in the centre and add butter. Once it starts to melt, add maida/all-purpose flour. Start mixing it together with the onions.


Step 3

Add water and milk to this and start mixing till everything comes together and you get a smooth sauce. Let this cool down and then blend it.


Step 4

Blanch the spinach by first adding them to boiling water for 2 mins and them immediately transferring them to ice cold water. Blend to form a puree.


Step 5

Back to the saucepot, add the creamy sauce along with spinach puree (pass through a seive), salt, pepper, nutmeg and combine everything well. Bring to a boil. Serve and enjoy!
