Vegetarian Sushi | Japanese

About the Recipe

I made a vegetarian version of Sushi using cucumber, carrot, grilled mushrooms and mango as the filling. This truly turned out super delicious and is definitely a must try for vegetarian Sushi lovers!

Ingredients

  • Sushi Rice (uncooked): 2 cups

  • Water: 4 cups

  • Sushi Vinegar: 28 gm

  • Veggies of choice

  • Wasabi: ¼ tsp

Preparation

Step 1

Wash sushi rice 2-3 times. Cook it in a rice cooker with water. It should ideally take 40 minutes to cook.


Step 2

Once the sushi rice are done, pour sushi vinegar over it and mix well.


Step 3

Prep veggies of your choice by slicing juliennes equal to the size of the nori sheet. I have used cucumber, carrot, mango and mushrooms. Cook the mushrooms in a pan with some oil before using.


Step 4

To assemble the sushi, take the sushi mat and put a nori sheet over it. Now spread the rice over the nori sheet, apply a little bit of wasabi, layer the veggies in the centre and roll the sushi using the sushi mat. (Please refer the video for rolling instructions)


Step 5

Your Sushi is ready. Cut into pieces and top with fried onions, spring onions, sesame seeds, etc. Serve with soy sauce and pink sushi ginger. Enjoy!
